Local dishes

Lovers of true, generous gastronomy will find plenty of tempting, delicious food to try out on both sides of the frontier as there is a vast range of typical regional dishes waiting to be discovered by  you.

The "waterzooi" is a delicate chicken or fish dish prepared in a vegetable broth.

The Flemish "carbonnades" combine all four tastes in a subtle way: savory (beef meat and vegetables), sweet (soft brown sugar and gingerbread), bitter (beer), and sour (vinegar and mustard). The "potjesvleesch" ("potch" for connoisseurs) is a delicious cold dish where veal, rabbit and chicken meat is mixed together.

Finally, rabbit "Ă  la tournaisienne", or simply rabbit with prunes, combines the sweet taste of onions, prunes and beer into a sweet-savory dish. It is traditionally prepared on blue Mondays, or on other special occasions such as the day after the Feast of the Epiphany, accompanied with a salad "tournaisienne", which is a mixture of wheat salad, apple, onions, Belgian chicory, red cabbage in vinegar and beans.
