Speculoos

Speculoos is at the same time a local product and one from abroad: a small short crust biscuit with a strong identity, typical in the North (always served with coffee or tea) and at the same time a biscuit with exotic perfumes seducing the palate to start dreaming. 

It is precisely the incredible mix of spices that transforms this biscuit into a heavenly flavor: pepper, ginger and cloves, nutmeg, cinnamon and cardamom. 

Sitting on your chair at the bar, you travel all along the spice trade route crunching this delicious biscuit between your teeth! 

In the meantime, speculoos found its place in the four corners of the culinary art of chefs: in the form of ice-cream or pasta, as garnish for macaroons, a base for crumble or pastry layer, and many more! But the biscuit is also suitable for adding its aromatic mixture to other dishes; either accompanying a lamb shoulder, or giving a finishing touch to some foie gras. 

In the regions of the North however, people continue to carefully dunk the biscuit in their coffee, sitting on their chair at the pavement cafĂ© while watching time pass by.
